Chicken Broccoli Casserole

Ingredients
  

  • 1 tbsp. extra-virgin olive oil
  • 1 c. small yellow onion chopped
  • 2 cloves garlic minced
  • 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
  • Kosher salt
  • Freshly ground black pepper
  • 1 c. white rice
  • 2 1/2 c. low-sodium chicken broth divided
  • 1 c. heavy cream
  • 2 c. broccoli florets
  • 1 c. shredded cheddar
  • 1/4 c. panko bread crumbs

Instructions
 

  • In a large oven-safe skillet over medium-high heat, heat oil. Add onion and cook, stirring, until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Add chicken and season with salt and pepper. Cook, stirring occasionally, until golden, about 6 minutes more.
  • Stir in rice, heavy cream, and 1 cup of the broth. Bring to a simmer and cook until rice is tender, about 15 minutes. Add remaining 1 1/2 cups broth, broccoli, and cheddar cheese and cook until broccoli is tender and cheese is melty, about 10 minutes.
  • Heat broiler. Sprinkle chicken mixture with bread crumbs and season with salt and pepper. Broil until golden and crispy, about 2 minutes.

Crock Pot Cubed Steak

Ingredients
  

  • 2 lb. cube steak about 4 pieces
  • 2 tsp. kosher salt
  • 1 1/2 tsp. freshly ground black pepper
  • 2 tsp. garlic powder
  • 2 large yellow onion sliced into 1/4" rings
  • 1 2-oz. packet onion soup mix
  • 1 c. low-sodium beef broth
  • 1/4 c. cold water
  • 2 tbsp. cornstarch
  • Buttered egg noodles for serving

Instructions
 

  • Season steaks with salt and pepper. Add to slow cooker along with garlic powder, onion, onion soup mix, and beef broth.
  • Set slow cooker to low for 8 hours.
  • 1 hour before you’re ready to serve, mix cold water and cornstarch in a small bowl and stir into slow cooker. Cook on high until gravy has thickened, stirring periodically.
  • Serve over buttered egg noodles, and garnish with more pepper.

Slow Cooker Chicken and Dumplings

Ingredients
  

  • 2 tbsp Butter
  • 4 ea Boneless Skinless Chicken Breast
  • 1 ea Onion Finely Diced
  • 2 Cans Cream of Chicken Soup
  • 2 Grande Jr. Biscuits 10 Count
  • Flour

Instructions
 

  • Place the chicken, butter, soup, and onion in a greased slow cooker and fill with enough water to cover.
  • Cook on high for 5-6 hours
  • About 30 minutes prior to serving roll pieces of the biscuits in flour and drop in the slow cooker. Cook for an additional 30 minutes.

Notes

For added flavor add some sliced carrots and peas to the crock pot.
