2 lbs chicken breast, diced
Salt and pepper to taste
2 Tbsp vegetable oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
½ cup soy sauce
½ cup chicken broth
¼ cup rice vinegar
¼ cup hoisin sauce
¼ cup sugar
1 Tbsp cornstarch
2 Tbsp water
1. Season diced chicken with salt and pepper.
2. Set Instant Pot to Sauté mode. Add vegetable oil and brown the chicken.
3. Add garlic and ginger; sauté until fragrant.
4. In a bowl, mix soy sauce, chicken broth, rice vinegar, hoisin sauce, and sugar. Pour over chicken.
5. Close the lid and set Instant Pot to high pressure for 5 minutes. Natural release for 10 minutes, then quick release any remaining pressure.
6. Set to Sauté again. Mix cornstarch and water, stir into the pot, and simmer until sauce thickens.
7. Serve hot over rice with green onions or sesame seeds if desired.
